2 cups cucumber, thinly sliced
1/2 small sweet onion, thinly sliced (optional)
1/2 cup rice wine vinegar
2 tablespoons honey or raw sugar
1/2 teaspoon salt
Mix vinegar, sugar and salt, stirring until dissolved. Add cucumber (and onion) and mix
well. Marinate refrigerated for at least 1 hour or up to 24 hours prior to serving.
