INGREDIENTS
2 medium zucchini, shredded
3 carrots, shredded
1 Tablespoon each lemon juice, olive oil and white wine vinegar
1 teaspoon each toasted coriander and toasted cumin
Salt and pepper to taste
cayenne pepper to taste

DIRECTIONS
Mix together all ingredients.
Cover and refrigerate before serving.
