INGREDIENTS
1/2 cup (1 stick) butter, melted
1 cup light or dark brown sugar, lightly packed
1/4 cup molasses
1 teaspoon ground ginger
1/2 teaspoon each ground cinnamon and nutmeg
1/4 teaspoon ground cloves
2 eggs
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon each baking soda, baking powder and salt
2 cups rolled oats
1 cup each raisins and chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees. Lightly butter an 8 X 8 baking pan.
Mix brown sugar into melted butter. Stir in molasses and spices. Beat in eggs.
Combine flour, baking soda, baking powder and salt. Add to wet ingredients and stir
until completely combined. Stir in oats, raisins and walnuts. Press lightly into prepared pan.
Bake 25 - 30 minutes, until firm in the center. Store in an airtight container.
