1/2 cup honey
zest of one orange
1/2 teaspoon orange blossom water (optional)
1/2 teaspoon vanilla extract
2 cups pitted dates, chopped
1 cup walnuts, chopped
1/2 cup whole wheat flour
1/2 teaspoon baking powder
Preheat oven to 325 degrees. Lightly oil an 8 x 8 pan.
Beat eggs with honey, zest, orange blossom water and vanilla extract.
Stir in dates and
walnuts, mixing until completely combined with egg mixture.
In a separate bowl, combine flour
and baking powder. Stir into wet ingredients and mix until no traces of dry flour remain.
Pour into prepared pan and bake 20-30 minutes until center is firm to the touch.
Cool before cutting. Serve at room temperature. Store covered or wrap and freeze.
