INGREDIENTS
2 cups sliced carrots
1/2 cup water
1/2 cup sour orange juice, tangerine juice or orange juice mixed with juice of 1/2 lemon
2-3 Tablespoons honey

DIRECTIONS
In a large skillet, bring carrots and water to a boil.
Reduce heat to medium and cook without a lid (watch carefully) until carrots are tender and water has almost evaporated.
Add citrus juice and honey to carrots.
Bring to a simmer and cook until liquid is thickened and carrots are coated.
Serve hot or at room temperature.
Cover and refrigerate leftovers.
