1/2 cup unsalted butter, melted
1 cup brown sugar, lightly packed
1/4 cup molasses
1/2 cup cooked sweet potato, mashed
1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon allspice
1/2 teaspoon each ginger, cinnamon and nutmeg
2 cups rolled oats
1 cup chopped dates
1 teaspoon vanilla
Preheat oven to 350 degrees. Lightly butter a 9 x 13 baking dish.
Mix together butter, sugar, molasses and sweet potato until smooth. Beat in eggs.
In a separate bowl, combine all dry ingredients. Stir into wet ingredients. Add dates
and vanilla. Push into prepared pan. Bake 30 minutes. Cool before cutting. Store covered.
