2 Tablespoons olive oil 1/2 cup onion, sliced into thin shreds
1-2 hot peppers, chopped 4 cups small turnip green leaves
1/3 cup reserved steaming water 1/4 teaspoon smoked sweet paprika
1 teaspoon rice vinegar
Heat water in a steamer pot.
In a saucepan, heat olive oil, stir in onions and sauté until limp. Add hot peppers, reduce
heat to low, cover and cook 5 minutes.
After carefully cleaning each leaf, place turnip leaves in a stack and cut into thirds
crosswise. Place greens into steamer basket and cook until just wilted and tender. Remove
greens from steamer and place in saucepan with onion mixture, add water and paprika. Stir
well, cover and simmer for 10 minutes. Stir in vinegar and serve hot.
Cover and refrigerate leftovers.
