INGREDIENTS
1/4 cup each olive oil and apple cider vinegar
1 Tablespoon sugar
1 lime, zested and juiced
1/2 teaspoon salt
freshly ground black pepper or red pepper flakes to taste
6-8 cups finely shredded cabbage and carrots

DIRECTIONS
Mix together dressing ingredients in large bowl, reserving lime juice.
Stir in cabbage and carrots, cover and set aside.
Stir in lime juice just before serving.
Cover and refrigerate leftovers.
